Full description
Jima, the harvest of agave, is one of the main activities in the process of making tequila. It’s also the most artisanal part of the process and a tradition passed down through the years.  Learn about this process in the tequila-making experience and learn more about the 'Jimadores'’ task in the agave fields and how this process connects with the flavor and process of making tequila.

The Jimador, or harvester, cuts the leaves, or pencas, from the agave to find the heart, using a sharp, long-handled tool called a 'coa.' The skill of harvesting is passed down from father to son and a good jimador can harvest more than a ton of piñas in a day.
