Join a small cooking class of a maximum of nine participants inside a real Italian pastificio (pasta factory). Learn how to make many types of pasta in a simple and infallible way. Be able to recreate the dishes at home. Make handmade pasta with three different kinds of grains. The ancient Triticum Monococcum is considered the first cereal cultivated by man, around 7500 BC. Senatore Cappelli selected by Nazareno Strampelli in 1915 disappeared in the 1960s then was rediscovered thanks to a small farmer. The gluten-free Grano Saraceno (buckwheat) flour is the third flour you will use. Receive a welcome drink and listen to an explanation of safe food cutting procedures. Create thin sheets of pasta dough colored green with spinach or brown with sour cocoa. Discover three types of ravioli and a typical Roman sauce such as carbonara, cacio e pepe, or gricia sauce. You will make one type of pasta without egg, which is vegan. Taste all of the pasta and sauces that you have made whilst sipping Italian wine.

    After looking at several different options of pasta classes I chose this one. It’s not the least expensive, nor is it the most expensive. I chose this one because they use a rolling pin and not a pasta machine to roll out the dough. I also chose this one for the gnocchi on Thursday. The chefs are super upbeat, informative and provide hands on instruction when/where needed. If you’re looking for a pasta class where you throw some dough through a pasta machine while drinking bottles of wine, this is not for you. If you want to get a good introduction on how to roll out a sheet, then cut, shape, and fill your pasta this is it! After making all our pasta we had a great sit down supper with a glass of wine. The only negative, for me, was the gnocchi—it was more of a quick demo than an opportunity to bring the dough together ourselves with feedback. I also understand they have a timeline to keep. I would absolutely do this class again but not go out of my way to do it on a Thursday.

    This was at the top of our experiences in Rome. Chefs Emanuele and Angelo were terrific hosts and teachers. They made the experience fun as well as educational. And the pasta we made was the best we had during 6 days in Rome! We had a group of 12 individuals (6 US, 4 French, 2 Netherlands) from 10years old to almost 80. Everyone had a good time and was able to participate fully. Highly recommend this experience with Chefs Emanuele and Angelo.

    We did this cooking class on our last night and we absolutely loved it! Angelo, Emanuele and his team gave us great instructions so that we could make the best pasta in Rome ;-) The location is, as usual in Rome, small and cozy, but the space has been lovingly and efficiently designed. We were a total of 12 people and we all left the cooking class after a little over 3 hours with a full stomach, lots of impressions and a big grin on our faces. The whole team was full of passion and dedication! It should be so! I would book the course again immediately and can recommend it 100%.
