This stroll around the Palais Royal will take you to a confectioner who makes his creations right before your eyes using a traditional method.
What to Expect
The history of Parisian confectionery is inextricably linked to the influence of Catherine de Medicis who, upon her arrival in France in 1533, brought with her some of the most famous Italian confectioners and ice cream makers. These confectioners set up shop in the rue "des Lombards" which would become the landmark for French confectionery. New imported methods, such as crystallisation through impregnation with sugar, made a name for these products which were very popular at court. However, it was in the 19th century with the discovery of beet sugar that sweets would gain popularity in France. Far removed from this industrialisation, the confectioners that we are taking you to visit use a traditional method dating back 300 years.

The sugar is worked entirely by hand by confectioners trained in the method. After cooking, the different sugar parts are assembled as you watch, forming the body of the sweet in the chosen colors and patterns.

Once spun and cooled, this sugar is cut up into individual sweets. Rediscover the old world confectioners through the explanations and commentaries that the artisans who specialise in these techniques will share during your visit. This tour will take place around the Palais Royal and pass by the Comédie-Française and the Palais gardens, the home of Philippe d'Orleans with its 18th century courtyard. This is an opportunity to learn the history of confectionery and of Catherine de Medicis as you stroll through in this iconic district.
