Get to know one of the natural wonders of Oaxaca: Hierve el Agua. Hierve el Agua is a natural scenery of petrified waterfalls. Hierve el Agua is the first stop on our tour. We stayed there for 3 hours to have enough time to enjoy the natural wonders of Hierve el Agua. There you can go on a tip based hiking tour with local guides, or take a dip in to the pools. On the way back to the city, we visit one of the most popular mezcal distilleries in Oaxaca. There you can do a free mezcal tasting, and taste the different flavors of mezcals that exist. The tour lasts approximately 8 hours, and includes entrance fees to Hierve el Agua

2. From Oaxaca: Hierve el Agua and Teotitlán del Valle

After pickup from your hotel in Oaxaca city, journey towards Hierve el Agua to see the famous petrified waterfalls formed over thousands of years. Enjoy some time to swim in the natural pools formed by the waterfalls, and delight in the stunning landscape of the Sierra Madre del Sur. Continue the tour with a visit to a traditional mezcal factory. Learn more about the production process of the famous Mexican spirit. Take the opportunity to taste some of the mezcal produced here. The final stop on the tour is the "Pueblo indígena Zapoteca de Tapetes." Known also as Teotitlán del Valle, the town is famous for its beautiful textile wool products, made with natural dyes. See the beautiful patterns on rugs, jackets, bags, sarapes, tapestries, curtains, and dresses, made with large wooden looms. Learn about the ancestral, artisanal techniques used to make these quality products. The order of the excursion may be different during high tourist seasons in order to avoid waiting in lines at stops.

During this experience, you'll be taken through the Valley of Tlacolula to Santiago Matalan. During the ride, you'll be introduced to the culture of mezcal and its geographical context. Once in Santiago Matatlán, you'll be visiting an agave plantation to learn about these plants, their life cycle, varieties, and uses. Then, visit two different mezcal distilleries to see real production going on. From a home scale family-owned business with a long tradition of making mezcal in a rustic way to another way of production more sophisticated, yet artisanal. As each maestro mezcalero gives a personal touch to every batch, each tasting on-site means immersion in the mezcal culture. Afterward, you'll make a stop for lunch in a nice and neat last distillery with a great local cuisine restaurant. By this point of the trip, you'll already know how to taste mezcal as an expert. The premium quality mezcal you’ll taste here will be great for a last toast before heading back home.

Taste the traditional flavors and learn the techniques of Oaxacan cooking as you prepare authentic dishes alongside a chef who will explain what makes them unique for the region.  Start this fully interactive class exploring the main markets of Oaxaca city accompanied by the chef who will help you to identify the best and fresh ingredients on the list. Decide what dish to prepare between two suggestions by the chef. Then, get started cooking as you learn how to prepare one of the traditional meals that proudly represent an important cultural part of the beautiful Oaxaca state. During the lesson, the chef will also explain the benefits about each of the representative ingredients of the region, and which the locals prefer for the preparation of their dishes.  Prepare additionally some handmade tortillas and typical drinks to accompany your dish, such as Tejate, Chilacayota and Margaritas with Mezcal. Meet your guide to set sail from the Santa Cruz Pier at 09:30 am. Enjoy views of the bay as you head towards your first stop, a hidden beach on the coast of Huatulco National Park only accessible by sea - Chachacual Bay. Drop anchor and enjoy a swim in the calm waters at La India or relax on the sand to soak up the peaceful atmosphere at Chachacual beach. Explore the local reefs and marine species with a snorkel around the bay. Return to the boat to sail on towards Maguey Beach at Cacaluta Bay. Enjoy some beers, sodas or water on board as you catch a glimpse of the Rostro Mixteco rock formations and an island shaped like a turtle. Once you arrive your guide will point you in the direction of a beachfront restaurant where you can enjoy some tropical drinks or freshly caught seafood. You can relax here for 2 hours before boarding the boat once more to return to Santa Cruz.

In this experience, we will go to Etla traditional market, where we will obtain the necessary ingredients to prepare the recipes of the most traditional dishes and to try to preserve the quality and flavor. The dishes that will be prepared in this experience are dishes made from corn, chilies, seeds, cocoa and herbs prepared by “Tita” a traditional cook of Mixe origin with many recipes from previous generations… The menu will include: – Memelitas de chapulines – Memelitas de Huitlacoche – Egg memelitas with hierba santa – Empanadas – Mole – Chocolate de agua – Mezcal – Yolk bread – Fresh flavored water We will eat while listening to legends, tales or stories of Tita told in Mixe language and translated into English, at the end of the meal we will return to the meeting point which is the agency.

10. From Puerto Escondido: Huatulco 7 Bays Tour

Start the adventure with pickup from the lobby of your hotel in Puerto Escondido. Travel to Huatulco, and as you drive, be amazed by vibrant small towns that line the side of the road on the Oaxacan Coast. Begin your tour of the 7 bays at Santa Cruz Bay, where you will board a boat. Set off to explore all 7 of the bays as you admire the beautiful landscapes, the 'bufadero', and the lighthouse. Pass by Chahue Bay, La Entrega Bay, and Cacaluta Bay which is the filming location for several notable Mexican movies. Fall in love with El Organo Bay, where the natural scenery will leave you speechless. After this, marvel at the virgin sandy beach at the Chachacual National Park. Here, explore the reef with a snorkel or simply relax on the sand. With any luck, you might spot some dolphins, whales, or turtles. Then, return to Maguey Bay, to enjoy unique Oaxacan dishes and seafood at a local restaurant (not included in the price). Return to Santa Cruz where a van will take you to the village of La Crucecita. See the famous main church and visit the viewpoint that is perfect for taking photos. Stop at some local spots where you can taste mezcal, quesillo, chapulines, and mole. Then finally, end your tour by climbing back into the van and returning to Puerto Escondido.

This class was a highlight of our stay in Oaxaca. Learned about the local peoples, their food and traditions. The tour through the market and finding new ingredients was an adventure. The kitchen was large with room for everyone to complete their tasks that were assigned by the leader, Martin (who was an amazing organizer!) The menu that Martin devised on the fly to accommodate everyone's dietary requirements came together smoothly and the feast we all enjoyed at the end was one of the best meals we had on our trip. Will sign up again on our next trip. Highly recommend.

It was amazing! Balam was fabulous. We went to three unique distilleries, tasted Mezcal all day, Gaines new information, eight delicious food at one of the distilleries and were able to have an agave field tour. I highly recommend booking with his company for your next tour

The tour was fantastic! Fabio was the best guide we’ve had of any tour in Mexico. Very knowledgeable about Mezcal and Mexican culture in general. Lots of Mezcals were tasted and good times were had!

Our favorite activity was the weaving tour of a family run weaving store. The rugs the mother and father were weaving were amazing. We also enjoyed the tour of the animal carving and painting shop.

Great tour. Snorkeling was very good. We stopped three times to swim. The best snorkeling stop was near Playa Maguey The water is so clear. We saw a couple turtles and a spotted eagle stingray.
