Our Chef Clara brought our team of six apprentices to a local market and taught us how to select properly local seasonal products; this activity included of course some sampling of delicious cheeses. Back in her kitchen we learned to prepare 4 different dishes, including how to prepare pasta from scratch and a nice 'torta'. The teaching is in a real house kitchen, so you learn with utensils that you have at home, although hers has nothing to envy a restaurant's kitchen. You also learn some basic tricks on how to organize yourself to prepare all the dishes in sequence so you don't end up with one of them under- or overcooked. Making pasta was fun and easy, and far less messy as I expected. She keeps an eye on each one of the participants, and helps you understand and achieve the techniques quite easily. There were other similar offers, but she is the only one that included the visit to the market, plus she and her husband make the best Italian hosts. Highly recommended!!
Clara is professionally trained in culinary, pastry and is a sommelier!! Her well equipped spotless kitchen and home is close to an amazing and bountiful market. Using only the freshest of organic ingredients she has designed seasonal menus that appeal to all tastes and all skill levels. You will return home feeling more confident and certainly more knowledgeable about Italian Cuisine and actually 'roll up your sleeves' and make that pasta!! I can still taste the stuffed and baked artichokes and oh...the risotto was so delicious!! Remember the 'wave'!! You too will have a complete recipe booklet to take home and replicate the menu. This is a cooking experience you do not want to miss out on!! If I was in Milan or area I would most definitely be retuning for another class. The guide Fiamma was superb and full of local history and culture and knowledge. English was excellent. And the cooking pasta w Aurora was also such a treat and a fabulous evening and meal. We will enjoy the recipes w friends at home.
The experience was really wonderful. It was a good mix between demonstration and hands on approach. Clara went through each steps on preparation of each course item and provided coaching on how to procure similar ingredients in our respective countries. Clara and her family were very friendly and welcoming. I would recommend the experience to anyone who loves to cook or just loves to eat Italian cuisine.
We loved our day cooking with Clara! It was not touristy at all. Clara was very well organized, thoughtful , and friendly. We covered a lot of information quickly and marveled at the efficiency of her Italian kitchen. We made 4 different recipes, plus 3 sauces. We made our own pasta and it tasted amazing. It was the best tiramisu I have ever tasted! It was all small group (6 students). hands on class. Her English is perfect. She answered all our questions about Italian cooking and the Italian way of life. I am definitely a fan. If I am ever back in Milan, I would love to take another class. Mille Grazie, Clara.
