After a warm welcome from Alberto or Gianluca, your experienced trifolau (truffle hunter) guides, and their trusty dogs, Etan, Katt, or Bull, climb into their car to be driven to the Piedmont woods, where they usually hunt for truffles. Soak in the beautiful vineyards and scenery during the drive. On arrival at the woods, get a short introduction to the history and art of truffle hunting. Discover how trifolaus train and develop such close relationships with their four-legged friends. Then, learn about different types of truffles and their symbiotic relationships with trees. After all your truffle-related questions have been answered, follow the dogs' noses through the woods in search of these elusive mushrooms. You'll know when the truffle hunting dogs have found something as they start digging at the base of a tree, rooting out the truffle with their fine-tuned noses. If you're lucky, maybe they'll unearth the most famous white truffle in the world — Tartufo Bianco d'Alba — which is only found in Piedmont, making it one of the rarest and most coveted truffles around. Enjoy watching the truffle dogs at work as the sun sets over the surrounding Italian countryside. After working up an appetite gathering truffles, it'll be time for an aperitif. Head to a local winery in Gavi to sample three of their wines, all awarded the DCOG Gavi di Gavi quality label. Tenuta San Lorenzo, strategically located a few kilometers from Novi Ligure, Gavi, and Serravalle Scrivia, is ready to welcome you for a classic wine tasting experience. Upon arrival at Tenuta San Lorenzo, you will have the opportunity to learn about the ancient history of the estate and its surroundings, and, through a tour of the winery, you will be introduced to the winemaking techniques of the white and red wines produced on the estate. During the wine tasting, you will discover 3 of Tenuta San Lorenzo's wines: - The Spumante Brut "Tenuta San Lorenzo," vinified with the Martinotti method from Cortese grapes - The estate's Gavi Docg, vinified from Cortese di Gavi grapes - A red wine of your choice between Piemonte DOC Barbera and Monferrato DOC Dolcetto. Thanks to this experience, you will have the opportunity to understand, accompanied by the expert guidance of the producer, the different nuances of the Cortese grape grown in the estate's vineyards and discover how this variety can decline in different forms while maintaining its characteristic aromas and flavors. You will also be able to understand how Barbera or Dolcetto are adapted to these lands, perceiving the differences compared to the same grapes grown in other areas of Piedmont. Each glass tasted will be paired with a sample of local cured meats and/or cheeses, accompanied by breadsticks. Weather permitting, it will be possible to taste the wines on the terrace overlooking the estate's vineyards (upon request). We will put on aprons and start our cooking. We will start your Fresh Pasta cooking lesson, you will learn how to kneed, mix and shape the dough what to look for and what mistakes to avoid. You will each get your hands into the pasta and make your own. We will leave the pasta to rest while we prepare a seasonal sauce. This will be basil or pesto or fresh cherry tomatoes in summer in autumn mushrooms or sage butter. You will eat your pasta and sauce with a handpicked local wine and dessert. Set off on a half-day guided e-bike tour to discover the hills where the highly prized "Gavi" wine is born. You will travel along dirt roads riding a pedal-assisted mountain bike and visit some of the most famous wineries in the area, tasting excellent wines. You will be accompanied by an expert and certified guide who will allow you to discover the beauties of the upper Monferrato area. What we will do The meeting is at the agreed time in Gavi, in the province of Alessandria. Here the guide will welcome us, who will briefly explain how the e-bikes work and will give us the bike and helmet (included in the participation fee). After that, we will leave for our exciting tour of the Gavi hills. We will pedal towards the locality Piona, where a dirt road will begin between the Gavi vineyards. The tour will continue crossing the beautiful Neirone Valley, an area of great naturalistic importance located within the protected areas of the Piedmontese Apennines. From here we will be able to admire the famous Gavi Fort from below, one of the most evocative castles in all of Piedmont. Once off the nature trail we will cross the beautiful historic center of Gavi and then reach the Gavi Fort where, if you wish, you can take a guided tour inside (it is necessary to inform the guide in advance). We will then travel along the Lomellina road, along which we will be able to observe the Gavi vineyards. We will then stop in a cellar and, after a guided tour inside, a tasting of typical local products will be set up, accompanied by the wines produced by the structure. Once the tasting is over, we will continue on a circular route that will take us back to the starting point. The activity has a total duration of approximately 5 hours. Who is it for?
