Upon arrival, the chef will greet you and give you a tour of the cooking area and the equipment you will be using. The class will be conducted by the chef along with experienced village cooks, providing a hands-on learning experience.
Sri Lankan cuisine is renowned for its use of various spices and herbs, such as cinnamon, cardamom, cloves, dill, and curry leaves, which are easily obtainable on the island. The food is often heavily spiced with many subtle flavors, but balancing these spices so they don’t overpower the dish is an art. During the class, you will learn methods to optimize the use of spices in Sri Lankan cuisine.
You will prepare dishes such as milk rice (kiribath), sour fish curry (maalu ambul thiyal), potato curry, crab curry, achcharu, kokis, and more. You will learn the recipes and cooking methods, and get to try your hand at them with the guidance of the chef.
At the end of the class, enjoy savoring all the delightful dishes you’ve prepared.
