This once-in-a-life-time experience takes you to into Italy’s food valley on a full-day guided food and wine tour of Bologna and Modena.
Learn about Parmigiano‐Reggiano cheese production. The cheeses are made today as they were 8 centuries ago, using the same traditional, genuine ingredients, with the products aged for 2 years or more before they’re ready to be sold. A visit to the diary is followed by a cheese tasting.
Next you’ll visit a prosciutto producer. One of the earliest references to ham production in this region appeared around 100 B.C. in the writings of Cato. During classical times hams from the region were one of the delicacies featured on banquet tables. In fact, the pairing of melon or figs with prosciutto may have roots in the Roman custom of beginning meals with fruit.
Here and elsewhere in Italy, a typical serving of prosciutto consists of 3-4 slices artfully draped on a plate, and served with bread and perhaps a glass of dry Pignoletto, the lightly sparkling white wine of the region. Your visit to the producer ends with a prosciutto tasting.
The traditional balsamic vinegar, produced only in the areas of Modena and Reggio Emilia, is known as Italy’s black gold. Dating back centuries, balsamic vinegar originated as a medicinal for the exclusive use of kings and emperors. It eventually found its place in the kitchen, heightening flavors and enriching most every dish on the Emilian table, from the most simple salads and raw vegetables, to the most refined dishes such as filled pastas or meats.
