Welcome to Acetaia Gambigliani Zoccoli, one of the few remaining vinegar factories that produce only and exclusively Traditional Balsamic Vinegar of Modena PDO. Our tour includes a guided visit to the Antica Acetaia, where our vinegar barrels are stored, followed by a tasting of our beloved product and a rich assortment of local delicacies to pair it with. You will be welcomed by Mario and Giorgio Gambigliani Zoccoli, who will tell you all there is to know about the family history, the factory, Traditional Balsamic Vinegar of Modena PDO and its production. The tour continues with a visit to the Acetaia located in the attic of the Villa, where we store our precious barrels. At this point you will be ready for the rich tasting of Traditional Vinegar paired with some delicacies that have made Emilia-Romagna famous all over the world. Menu: • 3 types of Parmigiano Reggiano cheese (18 months, 24 months and over 30 months of aging) • 2 types of ricotta (from cow and sheep milk) • 2 types of omelette with vegetables (zucchini; peppers and onion) • 3 types of baked focaccia bread (with oil, cheese and mushrooms, cheese and ham) • 8 types of cured meats (Prosciutto Crudo di Parma D.O.P., Mortadella di Bologna, salami, ciccioli, coppa, pancetta, coppa di testa, lardo) • Risotto with Parmigiano Reggiano cheese • Two types of desserts (ricotta cake and cheesecake) • Coffee • Homemade liquors (Limoncello and Nocino)

Welcome to Acetaia Gambigliani Zoccoli, one of the few remaining vinegar factories that produce ONLY and EXCLUSIVELY Traditional Balsamic Vinegar of Modena PDO. Our guided tour includes a guided visit to the Ancient Acetaia in the historic family villa, followed by a tasting of our two products: Traditional Balsamic Vinegar of Modena PDO (minimum 12 years of aging) and Traditional Balsamic Vinegar of Modena PDO Extra Old (minimum 25 years of aging). The visit follows the ensuing program: • Firstly, you will be welcomed by Mario and Giorgio Gambigliani Zoccoli, who will introduce you to the history of the family and the factory, and explain everything there is to know regarding the production and features of Traditional Balsamic Vinegar of Modena PDO; • Secondly, you will visit the Acetaia (vinegar cellar), located in the attic of the family Villa; • Then, you will get the chance to taste our two products: Traditional Balsamic Vinegar of Modena PDO (minimum 12 years of aging) and Traditional Balsamic Vinegar of Modena PDO Extra Old (minimum 25 years of aging). After the tasting a wide arrange of local delicacies will be served to be paired with our vinegar, such as ricotta and Parmigiano Reggiano cheese, focaccia, omelettes and more. To meet the needs of our visitors, we also offer the possibility to purchase our vinegar directly at the villa or have it shipped to their home address.

The tour was fantastic. They great you with Moka, water, regional wines and friendliness. You relax in their beautiful garden until the tour begins. The tour explains the heart of Balsamic; the regional grapes, the length of the fermentation process, the family history of their barrels, and the differences in products in the grocery store verses theirs(the true balsamic). The guide was very friendly and answered many questions well. After the tour we enjoyed a lunch with regional foods(various prosciutto, foccacia, quiche, Parmigiano, wine, risotto, desserts, liquors). This included tasting their balsamic at 12 and 25 years and instructions on how to pair them with foods. The environment was peaceful and welcoming. After lunch they invite you to buy their amazing product or ship it to your home! As we were leaving Mario, the founder, came and introduced himself to us, told us about gis family and showed us pictures. This is the authentic Modena experience you want to have.

It was Perfect! It was a very special experience. loved meeting the owner and his grandchildren - seeing them living their lives around their beautifully restored home - that is the center of their balsamic business. They are passionate about the quality and proud of the legacy. The pairings were local, homemade, and special. It is a very special family - you should meet them!

Great experience at family run producer of Balsamic vinegar. everyone was super friendly, out guide was very knowledgeable and explained production in great detail. plenty of food for lunch, homemade tasty food. Owner Mario came to talk to us as well. I was offered a ride back to Modena for a fee, which was great because I didn't have a car. I would definitely go back.

Incredible!! The hosts were all so nice and proud of their family legacy and business, the food was incredible, the balsamic vinegar was amazing. The whole experience was so wonderful!
